You can always make a copy, to create a baseline. For example, suppose you have a folder in your repository named "baselines". You would run:

$ svn copy -m "Create baseline" url://server/repos/trunk url://server/repos/b​aselines/baseline-12​3

That said, Subversion also has a built in baseline which is the revision number. The sort of copies I mentioned above are for convenience purposes. As long as you know the revision number when a path was the way you wanted it, you can always go back to that revision or copy it, check it out, whatever you need to do.
